Elderberries contain a high concentration of anthocyanidins, which combine to generate a rich blue-purple juice. In their uncooked form, elderberries include 80% water, 18% carbohydrates, and less than 1% protein and fat. Elderberries are high in vitamins, minerals, and three types of flavanols, which are naturally occurring compounds in plants with antioxidant properties. Antioxidants and vitamins are found to help reduce inflammation and stress, as well as potentially provide cardiac protection. Despite its name, this berry does not age you. The exact reverse is true.
